Sweet Potato Biscuits (Africa)

sweet potatoes: 2 50
margarine: 1 27
flour, roots: 3 50
sugar: 6 27
baking powder: 2 31
salt, table: 1 31

Steps
1. Wash, peel and boil the sweet potato tubers until cooked.
2. Drain the cooked tubers and mash.
3. Measure out 2 mugs of mashed potato.
4. Sieve the flour, salt and baking powder together.
5. Mix the mashed potato, sugar and margarine together.
6. Add flour to the potato mixture. Mix thoroughly.
7. Roll the dough out on a lightly floured surface until thick.
8. Cut out shapes with an upturned glass.
9. Place on a well oiled baking tray.
10. Bake in a moderately hot oven (180?C) for 12 - 15 minutes until golden brown.
