Advises on handling and freezing small pelagic fish in quantity soon after capture, on the fishing vessel or onshore in a processing plant, e.g. herring, mackerel, sprat, blue whiting, and should be read in conjunction with Notes 27, 28 and 34. Considers the nature of the raw material and handling before freezing, and emphasises the need for rapid handling and chilling. Discusses size grading, loading and unloading the freezer with whole fish or fillets, and freezing times with different products and packaging. The larger freezer and factory vessels have the capacity to freeze 4-8 tonnes/hour. In addition to the Notes referenced in the text, the information is also relevant to the following Notes, 44, 57, 62, 66, 73, 81 and 93.
