Nixtamalization

Nixtamalization was invented by Mesoamerican indigenous peoples. This technique is responsible for increasing the nutritional value of corn by transforming it into a dough. The products made from this dough become excellent sources of calcium, a mineral that the body needs to form and maintain strong bones.
