文化和饮食传统:通过支持健康、多样化且文化上适宜的膳食,生态农业有助于实现粮食安全和营养,同时维持生态系统的健康

农业和粮食是人类遗产的核心组成部分。因此,文化和饮食传统在社会和人类行为塑造中发挥了核心作用。然而,在许多地方,我们当前的粮食系统导致了饮食习惯与文化的脱节。这种脱节的后果是,虽然这个世界生产的粮食足够养活全部人口,但饥饿却与肥胖并存。世界范围内约有八亿人口长期挨饿,2亿人受到微量营养素缺乏症的影响。同时,肥胖和饮食相关的疾病一直在攀升。有19亿人属于超重或肥胖,非传染性疾病(癌症、心血管病、糖尿病)成为全球第一大死亡原因。要想解决粮食系统中的不平衡并逐步实现零饥饿世界,单单依靠提高生产水平并不够。

生态农业发挥着平衡传统与现代膳食习惯的重要作用,使两者和谐共存,共同促进健康的粮食生产和消费,为实现充足食物权提供支持。通过这种方式,生态农业在人类与粮食之间建立一种健康的关系。

文化特性和归属感往往和景观以及粮食系统密切相关。人类和生态系统是共同演化的,所以文化习俗和本地传统知识能提供宝贵经验,激发生态农业提出解决方案。例如,印度大约有五万种本土水稻品种—这些品种都是经过数百年的培育,有其特定的味道、营养、抗虫害特点以及对多种情况的适应能力。烹饪传统也围绕这些不同的品种形成,利用它们不同的特点。以这些日积月累的传统知识为向导,生态农业能充分发挥土壤的潜力,供养以这片土地上的人们。
