Swiss Chocolate Workshop

At the Swiss Pavilion at Expo Milan 2015 on 7th and 8th October, participants in a series of chocolate workshops were given the opportunity to make their own chocolate while learning about food safety.

2015 has been a special year for food safety as WHO has placed special emphasis on raising awareness about the importance of ensuring food safety along the entire food chain, from primary production to consumption, in order to protect the health of consumers and ensure public health.

The Milan workshops were a joint venture between Switzerland and WHO and focussed primarily on promoting the WHO Five Keys to Safer Food.

5 Keys

  • Keep clean
  • Separate raw and cooked foods
  • Cook thoroughly
  • Keep food at safe temperatures
  • Use safe water and raw materials  

The hands-on workshops were also an opportunity for interaction and exchange about food safety amongst food safety experts, including the food safety inspection and enforcement authorities, workshop participants, the audience and passers-by.

The Chair of the Codex Alimentarius Commission Awilo Ochieng Pernet, speaking at the workshops said:

“The application and enforcement of Codex Standards by relevant stakeholders along the entire food chain ensures food safety and quality. Consumers also have an important role to play in this regard. The WHO 5 keys to safer food are important food hygiene principles that consumers should always keep in mind and apply effectively in order to protect themselves from foodborne diseases.”
