Steps
1. Preheat oven to 450 degrees F.
2. Peel the plantains and place them on a cookie sheet. Bake them for about 30 to 40 mn or until hard to the touch.
3. Meanwhile, saute garlic, onion, coriander leaves, parsley, and salt in the olive oil.
4. Bring the chicken bouillon to a boil, reduce the heat to medium temperature and add this mixture. Cover and simmer for 10 mn.
5. In a wooden bowl, crush the baked plantains into big pieces and sprinkle with sour orange juice, or vinegar.
6. Add to the chicken broth and cook over medium heat for another 10 mn.
