Steps
1. Put rice, milk, margarine, chopped lemon rind in a pot and boil slowly about 20 mn. Remove from heat.
2. Add sugar. Let cool a little, then add 2 egg yolks. Beat eggs whites until very stiff, then carefully fold into rice.
3. Transfer the mixture to a well-buttered ovenpoof bowl. Put some butter flakes on top. Bake at 200-225 degrees F for 45 mn. Serve with fruit sauce and fruit slices.
