Orange Minted Rice

Steps
1. Cook rice in boiling water until tender.
2. Heat butter in pan, saute celery and onions; add salt, pepper, and orange rind.
3. Add orange juice, water and mint; bring to a boil and cook until vegetables are done and liquid has evaporated.
4. Remove from heat, then stir in cooked rice. Cover and let stand for 5 mn before serving.
