Steps
1. Scrape carrots and cut into thin slices. Cut beans diagonally and cauliflower into slices with some stem.
2. Shred cabbage coarsely. Heat oil in a large pan and saute mustard seeds and curry leaves for 2 minutes, stirring. Add garlic, ginger, turmeric, and chili powder and stir for a minute or two.
3. Add carrots, beans, and cauliflower. Stir over medium heat till half-cooked.
4. Add cabbage and continue to toss and cook for 5 mn till vegetables are tender but crisp. Sprinkle with salt, mix well, cover and cook for 2 mn. Serve immediately.
