Rollitos de platano maduro con queso
Ingredients

cheese, cheddar: 12 21

Steps
1. Peel the ripe plantains and cut them lengthwise into 1/4-inch thick slices. Each plantain will make 4 slices.
2. Carefully fry the plantain slices on both sides in 1/2-inch of hot oil until golden brown.
3. Drain. Dry on paper towels, and allow to cool slightly until you can hold them in your fingertips.
4. Place one piece of cheese on one end of the fried plantain slice, roll the plantain over to the other end, and secure it with toothpick with the cheese cube inside.
5. Thoroughly dip them into the beaten egg mixture, and fry again in 1/2-inch of medium-high hot oil until golden brown.
6. Serve immediately.
