Frejon

Ingredients
coconut: 140 6
cowpeas: 230 6
water: 1 10
cloves: 3 or 4

Cooking Time (minutes): average (30 minutes - 2 hours)
Steps
1. Wash cowpeas and boil until mushy.
2. Mash into a smooth paste using a wooden spoon or blender.
3. Break the coconut open, remove the nut, and grate it into the coconut milk.
4. Add water and strain to obtain coconut milk.
5. Add the coconut milk to the mashed cowpeas and strain.
6. Add cloves.
7. Boil in an uncovered saucepan until the mixture thickens (about 1 1/2 hours)
8. Add salt to taste.

Comments
This dish can be served as a savoury as well as a dessert. As a savoury, it is served as a sauce with fish and gari. For a dessert, sugar is added and it is chilled to harden.
