Steps
1. Wash and cook the cowpeas until soft and dry.
2. Fry the sliced onion, tomatoes, pepper, and ground smoked shrimp in the palm oil.
3. Add pepper and the cooked cowpeas. Simmer for 5-10 mn.
4. Garnish with 4 hard-boiled eggs and serve with any of the following: boiled rice, fried or boiled plantain, boiled yam, or abolo.
