Steps
1. Cut squash in two lengthwise and remove seeds.
2. Cut crosswise in thin slices.
3. Wash in salted water and drain.
4. Pound garlic lightly and brown in hot fat.
5. When it begins to brown, add sliced beef, squash, nguoc-mam and serve garnished with parsley and chives cut in one inch pieces.

Comments
Margoses are a type of squash found in Southeast Asia. The only English name we can find is the above, but any squash can be used instead.
