Beef Tapa

Ingredients
garlic: 5
beef: 1 1/2 8
sugar: 4 27
coriander: 2 27
pepper: 3 27
salt, table: 1 27
soya, sauce: 3 27
sauce, patis: 3 27

Cooking Time (minutes): advanced (over night)
Steps
1. Cut beef into thin slices. Crush garlic, coriander seeds, and peppercorns together.
2. Mix with beef. Combine sugar, salt, fish sauce, and soy sauce. Add to beef.
3. Marinate beef at least 5 hours or overnight in the refrigerator.
4. Strech marinated beef on a drying basket or cake rack. Put out in hot sun for 2 hours.
5. Turn and dry other side for another 2 hours. If it is not well dried, keep it longer under the sun.
6. Fry dried beef slices in hot oil until crisp.
