Steps
1. Wash and cook the cowpeas until almost done (approx. 1 hour).
2. Cut plantain into cubes, add to cowpeas, and cook for additional 20 mn.
3. Add remainder of the ingredients and cook until they are mushy.
4. Add salt to taste.
5. Serve alone or with gari, eko or agidi.
