The Urad bean is how local communities of Banswara district in the state of Rajasthan call the black gram variety. It is one of the most nutritious pulses known to humankind. Low in fat and calories, it helps to improve digestion. It contains high levels of protein, potassium, calcium , iron and vitamin B3. It makes our bones stronger and is said by experts to boost energy levels, enhance heart health and strengthen our nervous system.
Producers
The producers are organized in the Vaagdhara Tribal Food and Grain Initiative Procedure Company Limited and are certified organic through the Participatory Guantee System (PGS). They belong to Bheel ethnic group tribes, who are claimed to be one of the original inhabitants of India. Producers own less than two hectares each, and they cultivate the beans in a sloped and hilly area.
Processing
The beans are harvested when most of the pods turn black and dry. It requires less water and less maintenance compared to other crops. No chemical fertilizers or pesticides are needed for cultivation, and the crop is drought and disease resistant. Studies mention that urad beans were even used in medieval time to make crucibles impermeable, through processes are still largely unknown.
Territory and taste
Urad bean is originated in South Asia, probably in the region currently identified as the country India. It is one of the ingredients of Panchmel dal, a dish native to the Indian state of Rajasthan and made with five kinds of legumes. Thanks to the cultivation practices of this area, it has a specific and recognizable fragrance and taste.
