Le lait se gâte à cause des germes qui sont trop petits à apercevoir. Les germes se développent vite dans le lait et le gâtent. Ils se multiplient plus vite dans le lait chaud que dans le lait froid. Alors transporter le lait au centre de collecte dans les 30 minutes suivant la traite sinon il commencera à se gâter.
