1. Viande (de mammifères autres que les mammifères marins)
Les viandes sont les tissus musculaires, y compris les tissus adipeux adhérents tels que la graisse intramusculaire ou sous-cutanée, prélevés sur des carcasses ou des parties de carcasse danimaux préparées pour la distribution en gros ou en détail à létat frais. Les morceaux proposés au consommateur peuvent comporter des os, les tissus conjonctifs et les tendons, ainsi que les nerfs et les ganglions lymphatiques
2. Graisses de mammifères (sauf la graisse provenant de mammifères marins)
Les graisses de mammifères, à lexception des matières grasses du lait, proviennent des tissus adipeux des animaux (non transformés).
3. Graisses de volaille
Les graisses de volaille proviennent des tissus adipeux de la volaille.
4. Laits
Le lait est la sécrétion mammaire normale danimaux de traite obtenue à partir dune ou de plusieurs traites, sans rien y ajouter ou en soustraire, destiné à la consommation comme lait liquide ou à un traitement ultérieur.
