Melaku Tafese Awulachew, an Agricultural Institute Researcher at the Directorate of Food Science and Nutrition, Ethiopian Institute of Agricultural Research, oversees research in Plant Food Quality Control, Rheology, Quality Management Systems, and Food Safety. He holds an extensive publication record with 50+ research articles, contributions to scientific books, participation in conferences, and research projects.

 

Melaku Tafese Awulachew is a researcher in the Food Science and Nutrition Research Directorate, Ethiopian Institute of Agricultural Research, Ethiopia, M.Sc. in Chemical Engineering specialization in Food Engineering (2023), and B.Sc. in Chemical Engineering in specialization in Process Engineering (2015). He is the head of the Laboratories of Soil Science and Nutrition Research and later the head of Food Science and Nutrition Research for one term. Areas of expertise: food processing, product development and optimization, food rheology; food sensory analysis; bakery products; beer industry; food quality characterization by rheology techniques; textural techniques ( assessment of food sensory analysis activities; and design of experiments and data analysis. Experience in numerous interdisciplinary research projects. ► >50 peer-reviewed articles (mainly as first author); ►guest editor in 3 special issues from food science and technology; ►4 published book chapters; ►10 published books; ► Reviewer, Associate Editor, and Section Editor for various journals. ►member of the editorial team in 5 journals including Food Research International.
