1. CHAMP DAPPLICATION
La présente norme sapplique aux produits aqueux à base de lait et de crème de coco emballés conformément aux définitions figurant à la section 2 de la norme. La présente norme ne vise pas les boissons à base de noix de coco sucrées et/ou aromatisées.
2. DESCRIPTION
2.1 DEFINITION DU PRODUIT
Les laits et les crèmes de coco sont les produits préparés à laide dune quantité substantielle dendosperme (amande) frais séparé, entier, trituré macéré ou finement haché du fruit du cocotier (Cocos nucifera L.) et pressé, dans lequel la grande partie des fibres et résidus filtrables a été éliminée, avec ou sans eau de coco, et/ou avec adjonction deau.
2.1.1 Crème de coco
La crème de coco est lémulsion tirée de lendosperme (amande) mûr du fruit du cocotier, avec ou sans ladjonction deau de coco/deau; ce produit est conforme aux spécifications énoncées à la section 3 de la présente norme.
2.1.2 Lait de coco
Le lait de coco est lémulsion diluée dans leau de lendosperme (amande) de la noix de coco finement haché, les matières solides en suspension et les matières solubles étant réparties de manière homogène; ce produit est conforme aux spécifications énoncées à la section 3 de la présente norme.
2.1.3 Concentré de crème de coco
Le concentré de crème de coco est le produit obtenu après élimination de leau contenue dans la crème de coco; ce produit est conforme aux spécifications énoncées à la section 3 de la présente norme.
2.1.4 Crème de coco condensée
La crème de coco condensée est le produit obtenu après élimination supplémentaire de leau contenue dans le concentré de crème de coco; ce produit est conforme aux spécifications énoncées à la section 3 de la présente norme.
2.1.5 Lait de coco allégé
Le lait de coco allégé est le produit obtenu soit à partir du dépôt du lait de coco centrifugé, soit en diluant ultérieurement du lait de coco; ce produit est conforme aux spécifications énoncées à la section 3 de la présente norme.
2.1.6 Lait de coco écrémé
Le lait de coco écrémé est le produit obtenu soit à partir du dépôt du lait de coco allégé centrifugé, soit en diluant ultérieurement du lait de coco allégé; ce produit est conforme aux spécifications énoncées à la section 3 de la présente norme.
2.2 DEFINITION DES PROCEDES
Les laits et les crèmes de coco doivent être soumis à des procédés de pasteurisation, de stérilisation ou de pasteurisation UHT.

Les produits visés par les dispositions de la présente norme doivent être conformes aux limites maximales de résidus fixées par la Commission du Codex Alimentarius.
6. HYGIÈNE
6.1 Il est recommandé que les produits visés par les dispositions de la présente norme soient préparés et manipulés conformément aux sections appropriées du Code dusages international recommandé - Principes généraux dhygiène alimentaire (CAC/RCP 1-1969, Rév. 3-1997), du Code dusages international recommandé en matière dhygiène pour les conserves daliments peu acides transformés et conditionnés aseptiquement (CAC/RCP 40-1993), et du Code dusages international recommandé en matière dhygiène pour les conserves, non acidifiées ou acidifiées, de produits alimentaires naturellement peu acides (CAC/RCP 23-1979, Rév.2-1993).
6.2 Les produits doivent être conformes à tous les critères microbiologiques établis conformément aux principes pour létablissement et lapplication des critères microbiologiques pour les aliments (CAC/GL 21-1997).
7. POIDS ET MESURES
7.1 REMPLISSAGE MINIMAL
Le récipient hermétiquement fermé doit être bien rempli; le produit ne doit pas occuper moins de quatre-vingt-dix pour cent (90% v/v) de la capacité en eau du récipient, cest-à-dire le volume deau distillée à 20° C que contient le récipient une fois entièrement rempli et fermé.
7.2 CLASSIFICATION DES ARTICLES DEFECTUEUX
Un récipient qui ne répond pas au remplissage minimal requis de 90% (v/v) de la capacité en eau du récipient de la section 7.1.
8. ETIQUETAGE
Outre les dispositions de la Norme générale Codex pour létiquetage des denrées alimentaires préemballées, (CODEX STAN 1-1985, Rev. 3 1999), les dispositions spécifiques ci-après sont applicables:

8.2.1. Le ou les procédé(s) utilisé(s) pour préparer le produit doivent être déclarés si celui-ci ou ceux-ci affectent les propriétés, la qualité ou la durée de conservation des produits, par exemple, trituré, haché finement et macéré, broyé, etc.
8.2.2 Tous les laits et crèmes de coco qui subissent un traitement thermique doivent porter sur létiquette une déclaration du traitement de conservation ou de stérilisation (traitement thermique ou autre procédé de stérilisation), par exemple pasteurisé, stérilisé, pasteurisé HTST ou pasteurisé UHT.
