La elaboración consiste en tratamientos mecánicos, individuales o colectivos, aplicados a los componentes únicos o múltiples durante la fabricación de alimentos acuícolas compuestos. Estos procesos se llevan a cabo para modificar las propiedades físicas nutricionales de los ingredientes así como del alimento elaborado con el fin de asegurar un producto de calidad apropiada. Los procesos clave son agrupación, mezclado, reducción del tamaño de las partículas, acondicionamiento, aglomeración, acondicionamiento post empastillado, revestimiento de grasa, secamiento/enfriamiento, desmenuzado y envasado.
Las partículas de hierro que pueden depositarse sobre las máquinas y otros elementos deben ser controladas por el supervisor de producción y eliminadas cuando sea necesario. No quitarlas puede redundar en reparaciones muy caras de la maquinaria, heridas del personal, contaminación del producto, retraso en la expedición o la concurrencia de todos estos problemas, incluyendo la insatisfacción del cliente.
Las producciones en tandas de alimentos tratados con medicamentos deben unificarse todo lo posible. Cuando no pueda llevarse a cabo la producción consecutiva, el sistema de procesamiento debe limpiarse con un granulado a base de maíz o un ingrediente similar. Es conveniente que el flujo del material de limpieza se dirija hacia los recipientes que hayan contenido medicaciones similares.
Todos los operadores tienen que estar familiarizados con el funcionamiento básico de la maquinaria, tal como se encuentra explicado en las instrucciones contenidas en el manual de operación para la reducción a tamaño de partícula, en el manual sobre empastillado, en el manual del operador para la extrusión-expulsión u otros manuales de las diversas máquinas de la planta.
Antes de poner en marcha la maquinaria, el operador debe controlar el flujo del producto hacia su destino para prevenir la contaminación cruzada. La maquinaria empleada para reducir sustancias al tamaño de partículas (martillos, rodillos, etc.) debe controlarse periódicamente para lograr que éstas resulten del tamaño correcto.
Durante la peletización, debe controlarse que se obtengan gránulos duraderos y estables en el agua si fuera necesario (Tacon y Obaldo, 2001).
El acondicionamiento apropiado con vapor optimiza el proceso de gelatinización del almidón, que además de acentuar la digestibilidad también mejora la estabilidad de los alimentos en el agua (Bartone, 1999).
Luego de la extrusión, habrá que controlar la forma del producto, la densidad de la masa, su manera de flotar, a qué velocidad se hunde y también, periódicamente, el correcto tamaño de las partículas (McEllhiney, 1994).
Las cabezas orientables, los distribuidores, las válvulas de derivación y descarga deben ser controladas periódicamente para evaluar su funcionamiento, su papel en las pérdidas y su grado de precisión. El productor debe asegurarse de que los ingredientes cumplan con el proceso previsto.
