Con una cabaña bovina de casi 360 millones de cabezas, América Latina representa el 24 % de la producción mundial de ganado vacuno. La región es responsable del 23 % de la producción mundial de carne de vacuno y de más del 22 % de las exportaciones mundiales de este producto. Los productos ganaderos son una fuente básica de alimentos en la región, ya que aportan el 21 % del suministro calórico diario y el 50 % del aporte proteínico. Muchos países latinoamericanos han alcanzado tasas respetables de crecimiento de la productividad agrícola en los últimos años. No obstante, el aumento de la productividad será esencial para satisfacer las necesidades alimentarias nacionales y mantener la competitividad de las exportaciones.
