Avec un cheptel composé de près de 360 millions de têtes, l'Amérique latine représente 24pourcent de la production mondiale de bovins. La région représente 23pourcent de la production mondiale de viande bovine et plus de 22pourcent des exportations mondiales de viande bovine. Les produits de l'élevage constituent une source alimentaire de base dans la région, fournissant 21pourcent de l'apport calorique quotidien total et 50pourcent de l'apport en protéines. De nombreux pays d'Amérique latine ont atteint des taux respectables de croissance de la productivité agricole ces dernières années. Néanmoins, l'augmentation de la productivité sera essentielle pour répondre aux besoins alimentaires nationaux et maintenir la compétitivité des exportations.
